These delicious Gros Ventre River Ranch Old Fashioned Peanut Butter Cookies are a staple of our Dude Ranch cuisine here at the GVRR! They are naturally gluten free and always impressive! Whether they are an afternoon snack, a late night treat, or accompanied by a bowl of vanilla ice cream, they are guaranteed to leave a smile on your face!

Gros Ventre River Ranch Old Fashioned Peanut Butter Cookies
Ingredients:
- 2 c. peanut butter
- 1 ½ cups sugar
- 1 ½ packed brown sugar
- 2 eggs
- 2 t. baking soda
- 2 t. vanilla
- ½ t. salt
- Large sugar crystals for decoration
Cream peanut butter and both sugars until smooth. Add baking soda, salt, and vanilla. Add eggs one at a time, mixing until smooth. Cover a baking sheet with parchment paper. Roll heaping tablespoons of dough onto the prepared baking sheet. Flatten in a crisscross pattern with a fork and sprinkle the large sugar crystals on top. In a convection oven these cookies bake very fast-don’t leave them alone! Bake at 350 degrees. Cookies bake for between 6 and 10 minutes, and it is best to rotate them halfway through. Cool briefly on baking sheets and then transfer onto a cooling rack.
Adjustments
- If baking at a high elevation, adjust by using 1 1/3 cups of white sugar and 2/3 cup of brown sugar.
- Flax eggs may be used to make it egg free and vegan.
