Dude Ranch Cuisine ~ Gros Ventre River Ranch Brownies

Our chefs are constantly serving up fresh and innovative dude ranch cuisine here at the Gros Ventre River Ranch. Here is a recipe for one of our guest favorites, homemade deep dish campfire brownies!

GVRR Campfire Brownies

1 cup plus 2 tablespoons flour

2/3 cup unsweetened cocoa powder

¾ teaspoon baking powder

¾ teaspoon salt

1 cup unsalted butter, melted

2 cups white sugar

2 teaspoons vanilla extract

4 eggs

1 ½ cups semisweet chocolate chips (can substitute peanut butter chips, white chocolate chips)

Preheat oven to 350 degrees.  Grease an 8 inch square baking dish for deep dish brownies, or a 9 X 12 inch pan for thinner brownies. Make sure to reduce baking time if using larger dish.

In a large bowl, stir flour, cocoa powder, baking powder and salt with a fork. In a separate bowl, mix together melted butter, sugar and vanilla. Mix in eggs. Add the dry ingredients to the wet mixture in small amounts, until just blended. Stir in chocolate chips. Spread batter in pan evenly.

Bake at 350 degrees until done (edges pull away from pan, top looks dry, and knife inserted does not reveal uncooked dough,) about 40 minutes.

Dust with powdered sugar, and enjoy by a campfire, or serve with a scoop of your favorite ice cream.
